A burrito is closed at one or both ends (but not cooked after it is filled), and an enchilada is open at both ends and usually has a sauce over it before cooking it. That's my understanding of them, anyway, but I don't know how accurate that is.<br /><br />I like to make these (similar to your recipe), only I brush the filled tortillas with butter instead of pan spray.
