Chocolate Zucchini Muffins

I had some pretty sad looking zucchini that was not going to make it much longer so I knew I needed to use it as soon as possible. I decided I wanted to make some chocolate muffins or cookies with it so I began my search! After some adaptations and doubling the recipe this is what we got!* I have no picture because well they look just like my Banana Chocolate Chip Muffins and didn't want to bore you...

Chocolate Zucchini Muffins-adapted from Recipezaar
2 1/2 cups whole wheat flour
1 tsp baking soda
3/4 cup brown sugar
1/2 cup cocoa powder
1 tsp salt
1/4 cup oil
3/4 cup applesauce
1/2 tsp vanilla
1/2 cup milk
2 eggs
2 1/2 cups shredded zucchini
1/2 cup chocolate chips

Mix together dry ingredients. Add in eggs, milk, vanilla, applesauce, and oil. Mix throughly. Add in zucchini and fold in chocolate chips. Place in prepared muffin tins(either greased or paper cups). Cook at 350 for 20 mins or until cooked thorugh. *If doing mini muffins they take about 10 mins.

I ended up with 2 dozen mini muffins and 21 regular sized muffins.

**These came out very moist and chocolaty.

  1. Well, you know from my post today that I have a ton of zucchini - I should give these a try because they sound delicious!
