Chocolate French Silk Pancakes

We were having friends over for brunch the other day and wanted to do pancakes. I LOVE chocolate...any time of day is fine with me. K isn't a fan of chocolate in the morning so this made a great excuse to have both buttermilk pancakes and chocolate ones, so my friends could help me eat them! Unfortunately, they were unable to make it, but I still made the pancakes!

Chocolate French Silk Pancakes-shared from How Sweet It Is
2 cups whole wheat flour
1/4 cup powdered sugar
1/4 cup cocoa powder(I used special dark)
2 heaping tsp baking powder
1/4 tsp salt
2 eggs well beaten
1 can coconut milk+more if batter is too thick(I added a bit of reg. milk)
2 tsp vanilla extract

Whisk together flour, sugar, cocoa, salt, and baking powder. Add in eggs, vanilla, and milk. Stir to combine. Place on greased griddle, once bubbles start to form, flip.

**These were delicious! They were fluffy, chocolaty, and perfect for a Saturday morning.  The boys, except K loved them too! The batter is very thick so use your best judgement when adding more. I served them with butter and maple syrup.

Cookie Dough Truffles and Triple Chocolate Cookie Brownies

I was going to visit a friend over the weekend and she is always commenting on the food I make so I decided to bring her a couple treats for her!

Cooke Dough Truffles-shared from What Megan's Making
1 stick butter, softened
3/4 cup brown sugar(I didn't pack it)
2 1/4 cups ap flour
1 14 oz can sweetened condensed milk
1 tsp vanilla
1/2 cup chocolate chips(mini preferred)
1 bag chocolate melts or chocolate chips

Cream together butter and sugar until fluffy(about 2 mins). Add in milk, flour, and vanilla, beat until combined. Stir in chocolate chips. Chill dough for about an hour.

Melt chocolate chips or candy melts in microwave for 30 second intervals until melted ans smooth.

Roll dough into balls and dip into chocolate. Allow chocolate to harden.

**The dough really did taste like regular cookie dough! The dough itself had a strong sweetened condensed milk taste, but once the outside chocolate later was added they were truly indulgent!


Triple Chocolate Cookie Brownies-shared from Apples to Zucchini
For the brownie layer:
3/4 cup oil
3/4 cup ap flour
3 eggs
1 cup sugar
1/2 cup cocoa powder
1 tsp vanilla
1/2 tsp salt
1/2 tsp baking powder

Mix together eggs, oil, vanilla, and sugar. Add in dry ingredients and mix throughly. Place in 9x13 inch pan.

For cookie layer:
1 1/2 cups flour
1 egg
1 stick butter
1/2 cup cocoa
1 tsp vanilla
2/3 cup brown sugar
1/2 cup sugar
1 cup white chocolate chips(or reg. chocolate chips)

Cream together butter and sugars. Add in egg and vanilla and mix to combine. Beat in flour and cocoa until well blended. Stir in chocolate chips. *This is a very stiff dough so if you aren't using a stand mixer it will take some elbow grease! Break dough into pieces(about 1 tbsp size) and place on top of brownie batter. Bake at 350 degrees for 25-30 mins, maybe longer!

**The orinal recipe states to bake it for 35-45 mins. I baked for 30 mins and I think they were even over cooked a little bit. The brownies were still a bit gooey, but I think if they were a bit more gooey they would even better. This will depend on how you like your brownies...they were STILL marvelous and everyone I shared them with thought they were wonderful and very decadent! I did use white chocolate chips to help break up some of the reg. chocolate flavor a bit, it worked out great!

Chocolate Peanut Butter Popcorn

I decided I needed one more "treat" for a bridal shower gift(more coming on that soon). I remember seeing this recipe a while ago and wanted to make it, just hadn't had time or the opportunity to yet. I knew this would be the perfect time! This would make a great gift for Christmas or teacher's gifts as well! Afterall who doesn't love some gourmet popcorn?


Chocolate Peanut Butter Popcorn-shared from Annie's Eats
1/2 cup popcorn
2 tbsp oil
1/2 cup peanut butter
1 tsp butter
2 tsp brown sugar
1/2 cup(or more chocolate chips)

Place oil in pan and pop corn. I use a whirlypop, but you can also use an air popper or a regular pan and just shake it until the kernels are all popped. Spread popcorn out onto cookie sheets lined with waxed/parchment paper. In the mean time, place pb, sugar, and butter into microwave safe bowl and heat until melty so you are able to drizzle it. BECAREFUL THE BOWL IS HOT! (and ultimately the peanut butter is too!) Drizzle over popcorn and turn to coat, this works best with your hands. Spread to cool. (For me, I had enough pb mix to make another batch so I did, I also didn't measure out the pb so that could have been why).

Next melt, chocolate chips in microwave safe bowl until it is able to drizzle. Drizzle over popcorn and let set and cool.

I packaged mine into a big batter bowl with a lid for the shower gift, after all I thought she might like to share with her husband to be. But you can also use mason jars or pretty cellophane bags tied with a ribbon.

**This was tasty and it made A LOT of popcorn. This was a good thing since the boys were oogling over it while I was making it. I forgot to mention that next time I think I will add a touch of salt perhaps once I get the popcorn on it. It didn't give me a sweet/salty taste much(it could be the pb i used). And yes my kitchen was covered in chocolate...along with myself!
