I'm always looking for new way to make chicken and this sounded tasty and it combined yogurt with chicken for protein packed dinner!
Grilled Chicken Tzatziki-shared from Style At Home
Marinade:
1/2 cup plain greek yogurt
2 tbsp honey
2 tsp fresh lemon juice+2 tsp lemon zest
2 tsp hot sauce
1-2 cloves of garlic, minced
1 tsp dried oregano
1/2 tsp cumin
1/4 tsp pepper
pinch of salt
4 boneless, skinless chicken breast
Place all ingredients except chicken in a zip top bag. Mix together until well combined. Add in chicken and cover completely with mixture. Squeeze air out, seal, and allow to marinate for up to 4 hours.
You can then go on to grill the chicken until no longer pink. I cooked it in a 350 degree oven for about 20-25 mins and then turned the broiler on for 5 mins to get the charcoal look!
Let chicken rest for about 5 mins and then slice. Serve as is. OR I took a pita, and spread on some hummus, topped it with some lettuce, and then the chicken and wrapped it up.
**This chicken was SO moist and flavorful! It was the best chicken I've had in a long time. I loved the kick the hot sauce added and the citrus tang. Definitely will be made again! YUM! Even the leftovers were still moist and flavorful!

Maple BBQ Turkey Sloppy Joe's
I was recently reading someone's Tasty Tuesday type list and stumbled upon this. It sounded great so I couldn't wait to try it! Normally, I'd serve it on some Sandwich thins or homemade hamburger buns, BUT a wonderful lady from church made us some homemade bread(which I need to get the recipe for now) so I served it on that!
Maple BBQ Turkey Sloppy Joe's-shared from Rachael Ray
1 pkg ground turkey(usually around 20 oz)
1 red pepper, diced
1 tbsp poultry seasoning
salt and pepper to taste
1 onion, diced
2 cloves of garlic, minced
1/4 cup maple syrup(the real stuff!)
2 tbsp tamari(or 3 tbsp soy sauce)
8 oz can tomato sauce
2 tbsp cider vinegar
2 tbsp brown sugar(approx.)
Season turkey with poultry seasoning, salt, and pepper. Brown turkey until its no longer pink while breaking it up. Drain. Add in peppers, onion, and garlic and cook for about 5 mins until tender. Add in the remaining ingredients and stir to combine. Allow to simmer for about 5 mins until heated through.(Taste when done to check for seasoning). Serve over rolls or bread.
**These were really good and tasty! I was glad I only put in the 2 tbsp tamari as I think anymore it would have been to powerful! It was both sweet and salty and we loved it!

Big Mac Wraps
For some weird reason I had a craving for a Big Mac last week...I think I have only ever eaten one, but I knew I had this recipe at home so I wanted to make it again. Plus I figured it was a little healthier than the McDonald version. Luckily A requested burgers for dinner because I forgot to put them on my menu! This did hit the spot perfectly!
Big Mac Wraps-shared from Cooking During Stolen Moments
1 lb ground hamburger
1-2 tbsp Worcestershire sauce
salt and garlic powder to taste
flour tortillas
cheese
sliced dill pickles
lettuce(omitted b/c I was out)
tomato(omitted b/c I didn't have any)
Big Mac Sauce(this is half of the original recipe)
6 tbsp mayo
1.5 tbsp ketchup(I did add some more as the flavor wasn't quite there yet)
1/2-1 tbsp relish
1 tsp sugar
1/2 tsp vinegar
salt and pepper to taste
Combine hamburger with Worcestershire sauce, salt, and garlic powder. Mix together until combined. Flatten meat into thin patties and place on hot griddle(or grill pan). Cook until done.
Mix together sauce ingredients and taste to make sure the seasoning is all set!
When ready to eat, lay tortilla down on plate. Slather on some sauce, top with lettuce, tomato, pickles, and cheese. Cut burgers into strips and lay on top. Roll up and enjoy!
**Despite ours being a bit salty tonight thanks to my little helpers...they were fabulous and hit the spot well! We don't remember them tasty that good the first time I made them, but this time they were perfect!

Apple Cheddar Monte Cristos
I found this recipe in of the Rachael Ray's magazine. I have never actually tried a Monte Cristo before, but these sounded good. The original recipe did have bacon in it, but I omitted it as we are trying to have more meat free meals, but I did tell K about the bacon and he agreed it would have been a great addiction. He does have a slight addiction to the stuff.
Apple Cheddar Monte Cristos-shared from Rachael Ray
2 apples, thinly sliced
2-3 slices cheddar cheese
1 egg
2-3 tbsp milk
dash of nutmeg
1 loaf french bread or your favorite bread
Preheat griddle or george foreman grill.
Beat together egg, milk, and nutmeg.*The original recipe called for 3 eggs and half a cup of milk, but this made WAY to much egg mixture for my sandwiches and I used a whole loaf of bread, so I cut down the amounts, you can always make more if needed)
Take one piece of bread and slather/dip it into the egg mix. Lay on griddle or grill. Lay on half a slice of cheese followed by 2-3 slices of apple, followed by another half a slice of cheese.(I had small pieces of bread so you may want 2 whole slices/sandwich). Close grill and cook for about 2-3 mins until golden brown. If you are using a griddle flip once cheese is melted and one side is golden.
**This was a very quick and easy weekend night meal...if I had planned better on the bread, but that was my mistake. I didn't think you could really taste the egg on the outside as the apple and cheddar took over on the flavor scale. We served them with roasted sweet and white potatoes and it was very filling!

BBQ Beef Burritos
I saw this idea I believe in the Kraft magazine. I never thought to make burritos out left over bbq.
BBQ Beef Burritos
leftover rootbeer bbq beef
cheese
tortillas
spray oil(or butter)
Sprinkle some cheese down the middle of the one tortilla. Top with beef and sprinkle additional cheese on top. Fold in sides and ends to create a pocket. Spray with oil and place seem side down in hot frying pan. Spray top with oil. Cook until browned and flip.
**This was a very quick and easy weeknight supper and a great alternative to just bbq sandwiches.

Patty Melts
I've never actually HAD a patty melt, but 2 blogs in the same week posted them so I went along with it! They were fairly easy to make, just next time I will have to try a different bread, the homemade bread I made didn't do well with them...it was too thick and the taste was off.

Patty Melts-shared from Newlyweds
1 lb ground meat(I used turkey)
1 onion (1/2 shredded, 1/2 sliced)
1/4 tsp garlic powder
1 egg, slightly beaten
1 tsp salt
1 tsp pepper
2 dashes of Worcestershire
8 slices of bread
8 slices of cheese
butter
Mix together meat, egg, onion, salt, pepper, and Worcestershire sauce. Form into 4-6 thin patties. Cook on griddle until cooked through. Take off and keep warm. Place remaining onion on griddle and dash with Worcestershire sauce. Cook until softened. Remove.
Butter bread. Place on griddle with butter side down, add one slice of cheese, burger, onion, another slice of cheese and another piece of bread butter side up. Cook until cheese is melted, flip and continue cooking until side is browned. Cut in half and enjoy!
**Other than the bread not being that great, we did really like them. I'm sure they would taste even better if they were made with beef than turkey, but its what I had so that's what I did. Next time we will used different bread and try it with beef! It was a pretty quick and simple dinner!

Margarita Chicken Salad
Here is another favorite chicken salad of ours! I found it a few years ago in a magazine and its become quite popular in our house! It is very refreshing and tasty! I generally always have the ingredients on hand!
Margarita Chicken Salad
1 lb chicken
margarita mix(without alcohol)
1 tsp cumin
1 tsp lime zest
1/2 cup mayo(or miracle whip)
juice of 1 lime
1/8 tsp cayenne pepper
Place chicken, margarita mix(enough to cover chicken), lime zest, and cumin in container or zip top bag. Seal and let marinate for at least 4 hours. Grill chicken. Discard marinade. Chop or shred chicken. Mix with juice, mayo, and pepper. Serve on rolls.
**sorry no picture...we actually haven't had this all summer, but I think it needs to make an appearance very soon!

Hula Bagel Melts
I was looking for quick, easy, summer recipes and found this one. Although, its not very summery out today...we have rain and 60 degree weather, perhaps it will make it feel summery!
I also was VERY glad to FINALLY find a bbq sauce that was NOT made with high fructose corn syrup or any corn syrup for that matter. I have been experimenting with my own but just haven't found THE recipe yet! I got this one on sale so it helped! Even the organic sauce I have found some with the syrup in it so I've been on the hunt. This is made by kraft, but is called Bull's Eye...yet the regular kraft sauce has it in it. I don't get it...oh well on to the recipe!

sliced ham

Tex-Mex Cheese Steaks
I stumbled on this recipe in the Rachel Ray magazine as I was sorting through them. I love cheesesteak and love to change up recipes. This was very simple and quick!
Tex-Mex Cheese Steaks-Rachel Ray
1 lb shaved steak
olive oil
1 onion, slice
1-2 sweet peppers,sliced(I used 1 yellow, 1 red)
chili powder to taste
salt, to taste
1-2 avocados
2-4 rolls(I used homemade italian bread shaped into sandwich rolls)
shredded cheese
Place some oil in the bottom of the pan. Place onions and peppers into the pan and saute for about 5 mins. Add in steak, sprinkle with salt and chili powder. Cook until steak is cooked through. Sprinkle with cheese and allow to melt.
Slice rolls and toast. Spread half an avocado over bottom of roll. Top with steak mixture. Cover with top bun and serve.
**These were excellent! I was waiting for K to complain about the avocado, but he didn't. It was a nice change from your ordinary cheese steak. K said they were delicious. The boys had eggs and leftover waffles, they are not avocado or steak fans.

Steak and Cheese Grinders
I have been craving steak and cheese grinders...hoagies, subs, heroes, whatever you may call them for a while now. I of course haven't been able to find any shaved steak at my grocery stores. Thankfully, my mom told me they had it on sale at her store so she picked me up 2 packages, so thanks mom!
I used to cook at a local ice cream place back in college, so this recipe is taken from there. Oh how I love Anne's...
Steak and Cheese Grinder
2 sweet peppers(i used red and orange), sliced
1 onion, sliced
1 lb shaved steak
garlic powder
salt
italian seasoning
cheese(I used shredded cheddar)
4 grinder rolls
Saute peppers and onions, about half way through cooking add in your steak. The steak will not take long to cook so you will want your veggies almost done. Once your steak is added sprinkle in seasoning, this is done by taste, I basically just sprinkle it around the pan. Stir and continue to cook until no longer pink. Sprinkle cheese over the top and allow it to melt. Divide meat and veggies on top of grinder rolls and serve.
**Now this should feed 4 normal people with 4 normal sized rolls...our rolls were huge and well we ate it all, just the 2 of us in one meal!(ok K, didn't finish his, but his was bigger than mine.)

Roast Beef and Swiss Panini
I had 2 very lonely rolls leftover and I knew I needed to use them up before they went bad. The thing with homemade rolls/breads/muffins is that they do not last as long. So I decided to make a panini...without a panini press.
Roast Beef and Swiss Panini
2 pieces of roast beef per sandwich
1 slice of swiss cheese
half of one roasted red pepper
Dijon mustard
butter
2 whole wheat french rolls
3 cans of...beans, veggies, fruit whatever you may have(also 2 frying pans preferably one smaller than the other.)
Cut rolls in half and flip over. Butter inside of one bread, place in pan. Spread mustard on, followed by red pepper, 1/2 slice cheese, roast beef, and the other half of cheese. Spread mustard on other half of bread(the outside) and place on top. Cover with small frying pan w/ 2-3 cans in it. Let grill for 2-3 mins until golden brown. Move pan off, spread roll with butter, and flip. Place pan back on until golden on the other side. Let's just say this was absolutely delicious...and yes I ate both sandwiches!
