Chocolate Coconut Protein Shake

As much as I WANTED to walk to Dunkin' Donuts today for another pumpkin spice iced coffee.....I didn't. Instead I made this, I'm sure my health coach will like this choice MUCH better than the coffee!

Chocolate Coconut Protein Shake-
1 scoop chocolate protein powder
1 tbsp special dark cocoa powder
1 frozen banana
1 packet stevia(more to taste)
1/3 cup unsweetened coconut
1 cup milk
ice(maybe 1/2 cup?)

Place all ingredients into blender and blend until smooth. Serve immediately.

**This was pretty thick and delicious! My boys LOVED it. The coconut didn't get quite as small or blended as I would have liked but my coconut pieces started out bigger.

Apple Cinnamon Roll Cupcakes

 I was looking for something to make with my 20 lbs of apples we picked a couple weeks ago. I also needed something for a bake sale at church so I went with these.

Apple Cinnamon Roll Cupcakes-
Dough:
2 cups milk
2 1/4 tsp yeast
1/3 cup sugar
2 tsp salt
6 1/2 cups flour(I used white whole wheat)
2 eggs
1/4 cup butter, room temperature

FIlling:
1/4  cup butter, melted
1 cup sugar
1 cup brown sugar
3 tbsp cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground cloves
2 cups finely chopped apples

Heat milk to 110 degrees. Add yeast and sugar to a bowl and pour in the milk stir to dissolve. Add salt and two cups of flour and beat for two minutes. Beat in eggs and butter. Stir in the remaining flour half a cup at a time, beating well after each addition. Switch to the dough hook and knead for 2 minutes. Place dough in a greased bowl and cover with a towel. Place in a warm place and allow to rise for 40 mins or until dough is doubled. Line cupcake pan with paper liners.

Once dough has risen, roll out into 1/4 inch thick. Spread dough with melted butter. Mix filling ingredients together and spread over the top of the dough. Starting with the long end first, roll up dough jelly roll style.  Cut into 1 inch strips.  Take strip and fold in half to form the letter c and place into the cupcake pan.(This recipe makes about 24 cupcakes, I made 12 and put the extras in another pan like traditional cinnamon rolls), cover and allow to rise for another 40 mins. Preheat oven to 350 degrees. Cook rolls for 20 minutes or until golden brown.

Glaze:
1 cup powdered sugar
2 tbsp milk

Once rolls have cooled, mix glaze together and drizzle over rolls. Eat and enjoy!

**These were really tasty and a fun twist on the traditional cinnamon roll. They were also really cute in the cupcake tin. Next time I might use less sugar in the filling and make sure you mix the filling RIGHT before you are ready to put it on the dough, otherwise it makes a big mess!

Nutella Muffins

I love Nutella...and my boys call it chocolate peanut butter. I KNOW if I called it by the real name they wouldn't touch it, but then again it would mean more for me! So I went on a hunt for a sale on it and finally found one so I could try out these muffins!

Nutella Muffins-adapted from Eat At Home
2 cups flour(1/2 whole wheat was used)
1/2 tsp salt
1 tbsp baking powder
1 stick butter
3/4 cup sugar
2 eggs
3/4 cup milk
2 tsp vanilla
nutella

Preheat oven to 350 degrees. Prepare muffin tins with liners or lightly greased.
Stir together flour, baking powder, and salt.
Cream together butter and sugar. Mix in milk, vanilla, and eggs. Add in dry ingredients and stir well to combine.

Place about 1 tbsp of batter in the bottom of the muffin tins. Place 1 tbsp(or so) of nutella, cover with more muffin batter and spread to conceal it. Place in oven and bake for 15-20 mins or until they are done.

**These look like a simply muffin, but the ribbon...or glob of nutella really lends a lot of flavor to this muffin. The boys enjoyed them. Next time I think I will swirl the nutella in so the flavor is spread out more!

Vanilla Cranberry Muffins

I'm currently in the process of cleaning our the freezer. I happen to find half a bag of frozen cranberries, so this recipe seemed to fit the bill perfectly!

Vanilla Cranberry Muffins-shared from Finding Joy in My Kitchen
1 tsp vanilla extract
3/4 cup sugar
1/4 cup applesauce
4 tbsp greek yogurt(I used strawberry)
2 eggs, room temperature(mine were not)
2 cups whole wheat flour
2 tsp baking powder
1/4 tsp salt
1/2 cup milk
1 cup cranberries, chopped
nutmeg to taste

Preheat oven to 375 degrees.

Mix together vanilla and sugar until well combined. Stir in yogurt and applesauce. Mix in the eggs. In a separate bowl combine the wet ingredients. Alternate adding the dry ingredients into the sugar mixture with the milk. Fold in cranberries. Place in prepared muffins tins and bake for 20-25 mins.

**I really liked the tart cranberries with the sweetness of the muffin. It was also very moist and delicious!

Oatmeal Chocolate Chip Cookie Muffins

I always love finding new muffin recipes and this one sounded easy and tasty!*Oops apparently I forgot to take a picture of these! I'll have to remember for next time!

I totally messed up the recipe...I didn't read it all the way through and just did it the way I thought I a muffin recipe usually goes! But despite misreading the instructions they came out wonderful!

Oatmeal Chocolate Chip Cookie Muffins-shared from How Sweet It Is
1 cup rolled oats(old fashioned)
1 cup milk
1 cup whole wheat flour
1/4 cup butter softened(I used 1 tbsp butter, 3 tbsp oil)
1 tsp baking soda
1/4 tsp salt
1/2 tsp cinnamon
1/3 cup brown sugar
1 egg
1 1/2 tsp vanilla
1 cup chocolate chips

Preheat oven to 350 degrees.

Mix together milk and oatmeal. Set aside and allow to soak for about 5 mins or while you mix the rest of the recipe.

Whisk together flour, salt, cinnamon, sugar, and baking soda. Whisk in butter/oil(if you use all butter it may still be lumpy) and egg. Add in vanilla and milk/oatmeal, whisk until throughly combined. Fold in chocolate chips. Place in prepared muffin tins(this makes 12) and bake for 15-18 mins.

**I wasn't sure how these would come out after reading the recipe wrong...or not reading it for that matter! BUT they came out AMAZING! They are crunchy on the outside and moist and tasty on the inside! They also taste just like a cookie in muffin form! YUM! Next time I'll try to cut back on the oil/butter though just to make them a touch healthier!

Double Blueberry Muffins

Here we have yet another blueberry muffin! I don't think you can ever have to many can you? I noticed I needed to use up some blueberries I had and what better way to use them than in a muffin?

Double Blueberry Muffin-adapted from Apples to Zucchini
2 egg whites, beaten
6 oz container blueberry yogurt(greek or regular)
2 cups blueberries
1/4 cup unsweetened applesauce
1 tsp vanilla
2 cups whole wheat flour
3/4 cup sugar
2 tsp baking soda
1/2 tsp salt
1 tsp baking powder

Preheat oven to 350 degrees. Grease or line muffin pans(I got 1 dozen full size muffins and 2 dozen mini muffins!)

Mix together dry ingredients.(Minus 1/4 cup flour, stir that into the blueberries) Add in applesauce, yogurt, eggs, and vanilla. Lightly stir and add in remaining flour with blueberries. Stir until well combined. (I found this dough to be thicker than a regular muffin recipe, but it still works out fine) Place in muffin tins. Bake mini muffins for 10-12 mins or until a toothpick inserted comes out clean. Bake regular muffins for 15-18 mins until toothpick comes out clean.

**These were full of blueberry flavor and very moist! They were just a little sweet which made them perfect for me!

Oatmeal Fruit Bars

I had some fruit that was in dire need of being used...after seeing this recipe I thought it would be perfect!

I used about 1 qt strawberries and maybe 1 cup of frozen blueberries for the sauce. The original maker used raspberries(and she even put in some dark chocolate chips) so any fruit will do!

Oatmeal Fruit Bars-adapted from Finding Joy in my Kitchen
1 cup wheat flour
1 cup oatmeal
2/3 cup brown sugar(but i do think i used less)
1/4 tsp baking soda
3 tbsp butter,softened or melted
1/4 cup applesauce

Filling:(fruit of your choice)
1 qt strawberries, hulled, chopped
1-2 cups bluberries
2 tbsp sugar
1 tbsp cornstarch

Place filling in saucepan and turn on heat. Mix together and stir often until fruit softens and starts to get bubbly. I did mash my fruit towards the end, to get a nice thick sauce.

Preheat oven to 350 degrees.
Mix together oatmeal, flour, and baking soda. Take 1/3 of the mixture and put in another bowl add in the butter, until crumbly. With the other 2/3's of the mix add in the applesauce. Press the mixture into an 11x7 inch pan. Top with fruit, and add the last of the mixture(the one with the butter) sprinkled over the top. Bake for 20-25 mins until top is golden brown.

**These were very good and i loved the fruit layer! Its a bit similar to a nurtigrain bar but with more texture! The only problem I have with them was they were so thin, it could have been my pan, but I used a smaller pan than an 9x13, more like a bar pan. So next time I'll double the oatmeal mixture or use and 8x8 pan!

Homemade Soft Pretzel Bites

We had plans to meet up with friends today, but of course the weather discouraged us from doing it. So instead we made some pretzel bites.

We also had a science experiment, in the recipe it states to add the baking soda into the boiling water and guess what happens? EXPLOSION of water EVERY.WHERE. So when you add the baking soda please please please add in slowly.

Homemade Soft Pretzel Bites-adapted from Two Peas in Their Pod
1 1/2 cups warm water
6 tbsp butter, melted
2 tbsp light brown sugar
2 1/2 tsp kosher salt
2 1/4 tsp yeast
2 cups whole wheat flour
2 cups ap flour(up to another half cup)

Other ingredients:
3/4 cup baking soda
1 egg, beaten+1 tbsp water
kosher salt
cinnamon and sugar(optional)

Place ingredients in bread machine according to manufacturer's directions. Set to dough and let the cycle run through. Check the dough to make sure its not to wet or sticky, if it is add in more flour.

Once dough is done, remove from pan.

Preheat oven to 425 and place a large pot of water on stove and bring to a boil.

Divide dough into 8 equal pieces. Roll into long ropes. Cut into pieces.

Once water is boiling, SLOWLY add in 3/4 cup baking soda.

Place about 15 pieces of dough into boiling water and boil for 30 secs. Remove with a slotted spoon onto a cookie sheet. Brush with egg wash and sprinkle with salt or cinnamon and sugar and place in the oven. Bake for 10-15 mins until golden brown.

**A requested cinnamon and sugar ones, so I'll be melting some butter and rolling them in cinnamon and sugar. I didn't see on the original recipe where they said to do that after the egg wash. That would have been easier! Good thing I thought of it after!

These were soft on the inside and chewy on the outside. My first batch I think I cooked a little too long, but they still tasted wonderful! The boys had fun rolling the dough out.

Oatmeal Bars

I'm always looking for new breakfast or snack ideas. I'd love to find something that might be similar to a chewy granola bar...and I think this did it! The great thing about this recipe is that its very flexible. You can add or different kinds of add ins you would like!

Oatmeal Bars-shared from At Home with Haley
3 cups old fashioned oats
2/3 cup whole wheat flour
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
3 tbsp orange juice or water(I used water)
1 tsp vanilla(which I think I forgot!)
1/3 cup oil
1 egg, beaten
1/3 cup maple syrup or honey
Mix-ins of your choice:raisins, craisins, chocolate chips, peanut butter chips, nuts, m&m's etc(about 1/3 of a cup)

Preheat oven to 350 degrees.

Mix together dry ingredients. Add in wet ingredients and mix well. Stir in mix-ins. Place in greased 9x13 inch pan or cookie sheet with lip and spread out. (The recipe didn't specify, so I used my small pampered chef pan) Bake for 12-15 mins until browned and firm.

**The ONLY complaint I had for these were that they were a bit thin...so next time I'll double the recipe and use a 9x13 inch pan. They were delicious! Crunchy on the outside, a bit chewy in the middle. They tasted like an oatmeal cookie to be, but in bar from and healthier for you! Next time I may try subbing applesauce. The original recipe said you can also use apple juice concentrate instead of the oil...something I've never tried, but may soon!

Fruit Salsa with Cinnamon Sugar Chips

This sounded like a healthy summer time treat...on a cold winter day! Fruit has also been on sale so I thought it would be perfect!

Fruit Salsa-adapted from How Sweet It Is
1 qt strawberries, chopped
2-3 kiwis, peeled, chopped
2 apples, chopped
1 cup bluberries(or 1 container raspberries)
1 tbsp brown sugar
2 tbsp fruit preserve(I used Raspberry)

Mix fruit together with sugar and preserves. Chill until ready to serve.

**I cut back on the sugar, and only used 2 tbsp of the preserves. I really don't think it needed the sugar at all especially if you are super ripe fruit. This was very tasty, and filling!

Cinnamon Sugar Chips-shared from How Sweet It Is
1 pkg whole wheat flour tortillas
cinnamon and sugar(I have a jar I keep on hand)
Spray oil, or butter

Preheat oven to 350.

Spray tortilla with oil/butter. Sprinkle with cinnamon and sugar.  Cut into triangles using a pizza cutter. Place on cookie sheet and bake for 8-10 mins until crispy. Allow to cool and enjoy with salsa!

**These are super easy to make and delicious!

Maple Walnut Muffins

I had some walnuts leftover from Christmas baking so I decided I needed to use them up. What a great way to use them but in a muffin! YUM!

I did cut the sugar back in this recipe as it seemed like quite a bit of sugar especially with the maple syrup as well!

Maple Walnut Muffins-adapted from $5 Dinners
1 1/2 cups walnuts
2 cups flour(I think I used half ww, half ap)
2/3 cup sugar
1 tbsp baking powder
1 tsp salt
1 cup buttermilk(or milk)
3 eggs lightly beaten
4 tbsp unsweetened applesauce
2/3-3/4 cup maple syrup

Preheat oven to 350. Prepare muffin tins by either spraying them with oil or lining them with paper liners.

In a food processor(or blender) Combine 3/4 cup of walnuts and 1/2 cup flour and blend until nuts are finely chopped. Sift together flour, salt, baking powder, and sugar. Add in nut flour. Make a well in the center and add in eggs, buttermilk, syrup, and applesauce. Stir for about 1 min or until smoothish, but will still be lumpy. Chop remaining walnuts and stir into batter. Divide batter into muffin tins(I had 21 muffins)

Bake for 15-18 mins or until golden brown and toothpick comes out clean.

**These were really tasty and I'm glad I cut back on the sugar! I have found that the maple flavor is more prominent a day or two after making them. K loved them and requested them again for lunch today!

Butternut Squash Cinnamon Chip Muffins

I had bought a squash for Thanksgiving and then never used it. So I knew I needed to use it soon and I'm not a fan of it! I made it for dinner one night and gave it to K, but I remembered seeing this recipe in my blogging travels so I wanted to give them a shot!

Butternut Squash Cinnamon Chip Muffins-adapted from Creatively Domestic
1 cup flour
1 cup whole wheat flour
1/3 unsweetened applesauce
2 bananas mashed
3 eggs*
1/4 cup oil
1/3 cup sugar
1 cup butternut squash, cooked,mashed
1 tsp baking soda
2 tsp baking powder
1 tsp salt
2 tsp cinnamon
1 cup cinnamon chips

*The original recipe calls for 4 eggs, but I had 2 bananas to use so I cut back on one egg for the banana, but if you only have 1 banana use the 4 eggs!

Mix together the wet ingredients until combined. Stir together dry ingredients and add to wet until a batter forms. Stir in cinnamon chips. Place in prepared muffin tins. Bake at 350 for 16-18 mins or until toothpick comes out clean.

**I wasn't so sure about the combo of this while I was making it...BUT I am happy to say they were AMAZING! They were moist, not to sweet, and delicious! If I could actually convince my son to eat them I'm sure he'd love them! I told him they were banana muffins...and apparently he doesn't like banana muffins, but I also knew if I said they were squash muffins, the wouldn't eat those either. These are very similar to my browned butter pumpkin cinnamon chip muffins!

Oatmeal Tea Muffins

I found this recipe during Finding Joy in my Kitchen's Best of 2010 breakfast foods! I also believe that Snowhite tried this recipe as well, but she made them into a bread.

Oatmeal Tea Muffins-adapted from Loving my Domestic Life
1/4 cup milk
2 eggs
1/3 cup oil
1 1/4 cups unsweetened applesauce
1/2 tsp nutmeg
1/2 tsp cinnamon
1 tsp baking powder
1 tsp salt
1 tsp baking soda
3/4 cup sugar(although i do think i cut this down)
1 1/4 cup flour(ap and ww were used)
1 cup oatmeal
Topping:(omitted)
2 tbsp brown sugar
2 tbsp chopped pecans
1/4 tsp cinnamon

Preheat oven to 350.
Sift together dry ingredients. Mix together went ingredients and add to dry until just incorporated. Place in prepared muffin tins. Mix together topping and sprinkle onto muffins. Bake for 20 mins or until they test done with a toothpick.

**I made 2 dozen mini muffins and about 9 reg. sized muffins...my boys ATE them all in two days! My guess is they really liked those! I also liked them, the 2 I had! They were pretty tasty and not overly sweet and pretty healthy as well!

Cinnamon Sugar Coffee Cake Muffins

I had bagels planned for our Black Friday shopping day breakfast...and then realized my mom can't eat them. So I went with this recipe. Now the original recipe says it makes 10 muffins so I doubled the recipe...I got 2 dozen muffins! I knew 10 wouldn't last us long!

*This recipe is for a 10-12 muffins
Cinnamon Sugar Coffee Cake-adapted from Lick the Bowl Good
3 tbsp butter
3 tbsp applesauce
2 large eggs
1 tsp vanilla
1/2-2/3 cup sugar
4 oz vanilla yogurt(or sour cream)
1/8 cup milk
1 1/4 cups flour(ap or whole wheat)
1 tsp cinnamon
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt

Cinnamon Brown sugar filling
1/3 cup brown sugar
1 tsp cinnamon

Mix together brown sugar and cinnamon and set aside.
Cream butter and sugar together. Add in one egg at a time until well blended. Add in yogurt, vanilla, and applesauce. Mix well. Sift together dry ingredients and add in slowly, mix until just combined.

Scoop about 1 tbsp into prepared muffin tins(greased or liners). Sprinkle 1 tsp of cinnamon topping on top followed about another tbsp of batter.

Bake for 18-20 mins or until a toothpick comes out clean.

**These were really tasty! I did skip the cinnamon sugar topping and cut back on the sugar in the batter. I could probably cut it back even more with the cinnamon swirl in it. The outside edges got nice and brown and crispy which added a nice texture to the moist and fluffy center! YUM!

Pumpkin Spice Bagels

I am continuing my love for pumpkin right now...A asked for bagels and this was on my list this week so I went ahead and made them. They are very easy considering they use your bread machine, but I'm sure you could easily make them using a stand mixer.

Pumpkin Spice Bagels-shared from Apples to Zucchini
2/3 cup warm water
1/2 cup pumpkin puree
1/3 cup packed brown sugar
1 tsp salt
1 1/2 tsp cinnamon
3/4 tsp nutmeg
1/2 tsp allspice
1/2 tsp cloves
3 cup bread flour*
2 1/4 tsp yeast

*I used 2 cups whole wheat flour, 1 cup ap flour, and 4 tsp vital wheat gluten.

Combine ingredients in bread maker according to man. recommendations. Start dough cycle.

About 15 mins before the cycle ends, place a large pot of water on the stove and bring to a boil.

Once cycle is complete, turn dough onto lightly floured surface. Shape dough into 9 balls. Flatten slightly and push a hole into the middle. Stretch dough out to make about a 1 inch hole. Lay on cookie sheet, cover and let rise for 10 mins. Preheat oven at 400 degrees.

Place 2-3 bagels into boiling water and boil for about 45 secs, flip and boil for 45 secs more. Place on greased cookie sheet. Place in oven for 15-20 mins until golden brown.

**A wasn't a fan of these...even though I called them orange bagels. If I called them pumpkin, I knew he wouldn't eat it. Q on the other hand loved one and ate almost a whole one. Then half of mind for breakfast...I loved the flavor. I did freeze the batch this time as I remember last time they went bad before we finished them. Now we have fresh homemade bagel whenever we like! I think these would taste fabulous with the creamy apple tortilla cream cheese.

Maple Butter Spiced Popcorn

We have started to have movie night every Friday with the boys. I generally make a batch of popcorn to share. A couple weeks ago I think Finding Joy in my Kitchen posted this on her Friday Favorites...and so I saved it! It sounded PERFECT!

Maple Butter Spiced Popcorn-shared from The Kitchn
1/3 cup popcorn kernels
1 tsp ground cinnamon
1/2 tsp ground ginger (omitted)
dash of nutmeg (omitted)
1 tbsp butter
1 tbsp maple syrup
1/4 tsp salt (opitonal)

Pop popcorn by preferred style. I use my whirly pop.

Melt butter. Whisk in syrup. Combine spices and salt. Drizzle butter over hot popcorn sprinkle spices over top and shake. I ended up doing this in a couple times. Enjoy!

**I decided to leave the extra spices out as I wasn't sure how the boys would like it. In some recipes I also find that nugmeg over powers the dish so I went with just the cinnamon. Let's just say this was a very delicious treat! YUM! It was the perfect sweet/salty combination and easy to make!

Chocolate Graham Crackers

I tried a regular graham cracker recipe once...and they were more like a soft cookie vs. a cracker. But then I stumbled upon this recipe for chocolate ones. It had a different method of cooking so I gave it a try! To make just a honey graham cracker, leave out the cocoa powder.

Chocolate Graham Crackers-Heavenly Homemakers
2 1/4 cup whole wheat flour
1/4-1/2 cup sugar
1/3 cup cocoa powder
4 tbsp honey
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/4 tsp cinnamon
1/4 cup water
1 tsp vanilla(which I did forget!)
1 stick of butter melted

Mix together flour, sugar, powder, soda, salt, cocoa powder, and cinnamon. Add in water, vanilla, honey, and butter. Still until well combined. Dough will be stiff.

Line cookie sheet with parchment paper. Place dough on paper. Place another piece of parchement paper on top and roll out.*Don't try to skip the second piece, I did and it clearly did not work. The dough is very stick and kept sticking to my rolling pin. Once rolled out, cut into 2 inch squares, I used my pizza cutter.
Place in 350 degree oven for 18 mins. Once cooked, shut oven off, but leave crackers inside to crisp up for 30 mins to 1 hr. Remove from the oven and break along lines.

**I wasn't sure how I felt about the honey/chocolate together as I tasted the dough and it seemed off, but once cooked and cooled you didn't even taste the honey! These were crispy just like a store bought cracker and mighty tasty! YUM! Now I'll never have to buy the store bought again! They were fairly easy to make too!

Apple Brown Betty Muffins

Tiffany over at Eat at Home posted this recipe a few days ago. I added it to my list because I am ALWAYS looking for new muffin recipes and seen as it is apple picking time, what is better than an apple muffin? I had some apples that needed to be used up so I made them yesterday...when I was FREEZING! Yes it is definitely feeling fall like here!

Apple Brown Betty Muffins-adapted from Eat at Home
2 cups flour(half whole wheat/half ap)
1/2 tsp salt
1 tbsp baking powder
1 tsp cinnamon
1/2 stick butter(1/4 cup)
1/4 cup applesauce
3/4 cup brown sugar
2 eggs
3/4 cup milk
1 tsp vanilla
1 cup finely chopped apple(I chopped 2-3 apples)

Stir together dry ingredients. Beat the butter, applesauce, and sugar together until combined.(The butter will look chunky, I just beat it until they were small pieces). Fold dry ingredients into wet, just until combined. Fold in apples.

Place in greased muffin tin. Bake at 400 degrees for 15-20 mins. *Recipes says it makes 12 but I got 15 or 16 muffins

**These are some of the best muffins I've made in a while! They are moist and just the right amount of sweet. I didn't want to alter the butter or sugar at first, but then I decided too. I can only imagine what they would taste like with ALL the butter and sugar in them. So I made them a touch healthier...the boys haven't' seem to eat them yet, but that's fine I'll eat them all!

Peaches and Cream Muffins

I had some things I needed to use up in a hurry...peaches and sour cream. So I found this recipe to try out! I am in the process of making food for my brother in laws...I owe him his birthday present I believe still which was in May! OOPS!

So anyway, on to the recipe! This was very quick and simple to come together, the longest part was really chopping the peaches and I did leave the skins on.

Peaches and Cream Muffins-adapted from Taste of Home
1 1/2 cups flour(I used half wheat/half ap)
2 tsp baking powder
1/4 cup applesauce
1/2 cup sour cream or milk
1/2 tsp salt
1/2 cup sugar
1 cup fresh or frozen peaches, thawed, chopped

Mix together dry ingredients. Add in wet ingredients and stir to combine. (This was a pretty thick batter, so I added the peaches to help move it along) Place in prepared muffin tin. Bake for 15-20 mins until golden brown and cooked through.*The recipe says it makes 10 muffins, I got 12 plus a heart shaped ramekin that was equal to 2 more muffins!

**These were approved by my 3 yr old so they must be good!

Cinnamon Swirl Bread

This has been on my list of "to try" for a while now...apparently since April when Terra posted it on her blog! We decided to have breakfast for dinner so I made this bread to have french toast with. We very rarely have a morning where we are all home so we don't get big, delicious breakfasts very often!

It was pretty simple to put together considering you use a bread machine...although my dough rised right out of the pan and well into the window, thankfully I wasn't baking it in there!

Cinnamon Swirl Bread-shared from Barefoot ConTerra
1 cup warm milk
1/4 cup warm water
1/4 cup butter, softened,cubed
2 eggs
1/4 cup sugar
1 tsp salt
1 tsp cinnamon
5 cups bread flour
2 1/4 tsp yeast

Filling:
1/2 cup brown sugar
3 tbsp butter, melted
1 tsp cinnamon

Mix together for filling.

Glaze:(which I won't be doing)
1 cup powdered sugar
4 tsp milk
1/2 tsp vanilla

In bread machine pan, put in ingredients according to machine's directions. Set to dough and press start. Check dough about 5 mins in to make sure you don't need extra flour or water.

Once dough is done, turn dough out onto floured surface and divide in half. Roll one half out into a 10x8 rectangle.(I admit, I did not measure it!) Spread half of the mixture over the dough and roll up jelly roll style, seal ends and place seam side down in greased loaf pan. Repeat with second piece of dough. Cover and let rise 1 hr or until doubled in size.

Place in 350 degree oven for 25 mins. Cover with foil and bake for 5-10 mins more or until golden brown.

Mix glaze ingredients together and drizzle over cooled loaves.
**This bread was light and delicious!! We made it into french toast and it was mighty tasty! The boys both loved it!
