I think this will definitely be a new tradition in our house for birthdays!! I meant to get a vanilla cake mix because K doesn't like chocolate in the morning...but then I remembered it was MY birthday and not his, and I LOVE chocolate cake! This is quite simple to make and delicious!
Cake Batter Waffles-found on pinterest
cake mix
extra ingredients needed found on cake mix box(i did use applesauce instead of oil)
Toppings: homemade whipped cream, ice cream, sprinkles(we had whipped cream)
Preheat waffle maker. Make cake mix as directed on package. Laddle onto hot griddle and cook according to waffle maker's directions.
Serve waffles with a dollop of whipped cream or ice cream and sprinkled with some festive sprinkles!
**These were delicious and I loved how easy they were! They also made for a fun birthday breakfast! Next time I may try a homemade batter, I was just trying to keep it low key!

Cottage Cheese Waffles
I recently met with a health coach to help tweak my diet in hopes that it will help me to loose weight. Her answer to me was that I needed to eat more protein! While I eat pretty healthy I wasn't eating enough protein so she uped it...a lot! Something I'm really struggling with but I'm still working on it! I of course LOVE waffles and pancakes and still want to enjoy these with my family for Saturday morning breakfast. I went looking for high protein recipes and found this one...of course it was originally for pancakes, so after talking to my friend Hallee she helped me convert it for waffles.

Cottage Cheese Waffles-Whole Foods
1 cup white whole wheat flour
1/4 tsp salt
2 tbsp sugar
1/2 tsp baking soda
3 tbsp oil
4 eggs
1 cup cottage cheese(I used the whipped kind)
1/2 cup milk
vanilla extract(I think I used 1-2 tsp)
Preheat waffler. Spray with oil if needed.
Whisk together wet ingredients. Stir together dry ingredients and fold them into the wet ones. Scoop batter onto waffle plates and cook according to waffle maker directions.
**These are a VERY moist waffle so after the first one came out I cooked them a bit longer. This allowed them to be crispy on the outside and moist and fluffy on the inside. The boys ate them and love them. They had NO clue there was "cheese" in them. We liked the flavor as well and I was glad I added in some vanilla otherwise they'd be very plain tasting.

Waffles of Insane Greatness
I finally was able to buy some new waffle plates...my old Belgian waffle maker sadly bit the dust. And no it wasn't "that old" maybe a few years. So I found some plates that would fit into my George Foreman grill. I had one very excited 4 year old when they came and I was glad they did because I really wanted to try this recipe!
Waffles of Insane Greatness-shared from Finding Joy in My Kitchen
3/4 cup whole wheat flour
1/4 cup corn starch
1/2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1 tsp sugar
1/2 cup milk+2 tbsp(if using all ww flour)
4 tbsp olive oil
1 egg
3/4 tsp vanilla
Mix together dry ingredients. Mix together wet ingredients and add to the dry ones, mix until just slightly lumpy. Allow to sit for 30 mins.
Heat up waffle griddle. Oil if desired. Ladle batter onto hot griddle, close and cook according to your waffle maker directions. Top with your favorite topping and enjoy!
**I made these one morning when my mom and sister were here for breakfast. I made chocolate whipped cream and strawberries to go on top. They were really tasty! My mom also tried them with syrup and they were also good! I loved how crunchy the cornstarch made them and they tasted wonderful! They even reheated well, not soggy at all!

Peanut Butter and Jelly Waffles
I thought these sounded different and delicious while looking through my Taste of Home magazine! I did make homemade jam to go on top!
Peanut Butter and Jelly Waffles- adapted from Taste of Home
1 1/4 cup flour
3 tbsp sugar
1 tbsp baking powder
1/4 tsp baking soda
1/4 tsp cinnamon
2 eggs, separated
1/3 cup peanut butter
1 1/4 cup milk
3 tbsp butter, melted
In a large bowl combine flour, baking powder and soda, and cinnamon. In another bowl, whisk together egg yolks, milk, butter, and peanut butter. Stir wet ingredients into the dry ones just until moistened. Whip egg whites until stiff peaks form. Fold into batter. Place on heated waffle iron. Serve with jelly as syrup.
**These were quite tasty and a different take on waffles. The only problem I had was that my waffle maker decided to be finicky and stop working...as in it wouldn't open or close! I didn't take a picture because they we not that exciting.

Ham and Cheddar Waffles
We had this recipe before and I LOVED it the first time. The cheese gets crunchy and its a delicious way to enjoy a waffle. This time I had one apple that I needed to use so I shredded that up and added it in.
I apparently need a cooking break this week...although I know I won't get one. I've had numerous recipes so not work out for me. It could be that I try to do too much at one time. First it was the mac and cheese(while it was delicious it was not a creamy mac and cheese), then it was the egg biscuit cups, and now the first waffle I made separated and stuck(despite it being non-stick and I greased the griddle.)Little did I know that my "little helper" changed the setting so it didn't cook long enough. Oh I've also made dinner twice and not eat it because I wasn't feeling well and it just didn't seem appetizing...but see you can't always have great days/weeks I suppose.
Ham and Cheddar Waffles-All You magazine
1 1/2 cups whole wheat flour
1 1/2 tsp baking powder
1 tsp sugar
1/4 tsp salt
1 1/2 cups milk
1 large egg, beaten
4 tbsp butter, melted and cooled(I used half applesauce)
2 oz thinly sliced ham, chopped
1 cup shredded sharp cheddar cheese
Whisk together dry ingredients. Stir in egg, milk, and butter until combined. Fold in ham and cheese. Place batter in waffle iron and cook according to the directions. *I have a Belgian waffle maker and I doubled the recipe and only had 6 waffles....this was also on the highest setting and let it cook a little longer as they seem to need the extra time to cook.
**You could easily leave the ham out and use apple instead. I also would like to try it with turkey. Q and A really loved them.

Coconut Pecan Waffles
A has been begging me for waffles so I decided to finally make him some. His did not have pecans or coconut in it as he was sharing with Q, it did have sprinkles and coconut extract in it!
Coconut Pecan Waffles-Taste of Home
2 cups biscuit mix*
2 eggs, beaten
1/2 tsp coconut extract
1 cup club soda
1/2 cup flaked coconut, toasted
1/2 cup chopped pecans, toasted
1/4 cup applesauce
Mix together all ingredients. Place batter into waffle iron and cook until done.
*I had one cup of bisquick left and will no longer stock it, so I used the recipe on the back of the buttermilk container. 1 cup whole wheat flour, 1 tbsp sugar, 1 tsp baking powder, 1/2 tsp baking soda, 1/2 tsp salt.
**I didn't toast the coconut or pecans, I didn't realize that they needed to be toasted. They still tasted great, but the flavor would be even better if they were toasted. There is no picture because I forgot to take one just as I was eating the last bite!

Honey Buttermilk Yogurt Waffles
As I was asking A what he wanted for breakfast he informed me he wanted waffles. I of course had none in the freezer(these I do usually buy as I have a belgian waffle maker and well they don't fit in my toaster oven.) Perhaps I need a regular waffle iron too. So I told him I'd make them for lunch, then he got McDonald's. But he still wanted waffles and so then I had to look up a waffle recipe...for some reason I didn't have a go to waffle recipe. This one sounded interesting and I had all the ingredients.
Honey Buttermilk Yogurt Waffles- adapted from Annie's Eats
3 tbsp butter, melted
3/4 cup flour
3/4 cup whole wheat flour
1/4 cup oatmeal
2 tsp baking powder
1/4 tsp cinnamon
1/4 tsp baking soda
1 1/4 cup buttermilk(or milk)
6 oz container vanilla yogurt(or 3/4 cup)
1/3 cup honey
2 eggs
1/2 tsp vanilla(which I forgot!)
Whisk together flour, soda, powder, oatmeal, cinnamon. Add in buttermilk, honey, yogurt, vanilla, and eggs. Whisk until combined. Fold in butter. Place in waffle maker until golden brown.
**These are fluffy and moist. And if you are really lucky, your 3 year old will want sprinkles in them.
