Pepperoni Pizza Puffs


I stumbled on these last week and thought they'd be perfect to freeze for my brother in laws. I whipped up a double batch today. They were very quick and easy to make....the most time consuming was probably shredding the cheese. Even though I doubled the recipe I do not think I doubled pepperoni...I  may have doubled the cheese. I just used a whole 8 oz block! These are also kid friendly and a great appetizer! They don't even need sauce to dunk them in!

3/4 cup ap flour
3/4 tsp baking powder
1/2 tsp dried oregano
3/4 cup milk
1 egg, beaten
1 cup shredded mozzerella cheese
1 cup diced pepperoni

Whisk together flour, baking powder, and oregano. Stir in milk and egg. Fold in cheese and pepperoni until mixed in well. Set aside for 10 mins. Meanwhile lightly grease a mini muffin pan. Scoop batter into pan and bake at 375 for 20-25 mins or until golden brown.

**These were delicious! They were light and airy and the cheese made them crunchy on top! They do taste just like a pizza...in a muffin!

  2. Made them with a few changes.. I doubled the batch, used whole wheat flour (because it's what I have) and put them in full sized muffin tins instead of minis.. since the kids are having them for lunch! :-) They are SO tasty and super simple. Thank you again for the recipe!

  5. I've made things like these and they are great!!

    Sorry about the lentil joes that you tried. Lentils DO have a bite to them and that's why my brother wasn't a big fan of them, he didn't care for the texture. I loved them but I guess I knew what to expect.

  6. I just finished making these! They're great! I made 2 versions. The original pepperoni version, though I used a combination of mozza, old cheddar and parmesan cheese.

    For the 2nd version I omitted the oregano and pepperoni and used 4-5 strips of bacon, diced and fried (for a double batch) for my daughter who dislikes pepperoni.

    Thanks for posting this recipe. They're going to be great for school lunches for my high schoolers!
