It's the season of Lent and that means that on Fridays we are meat free. This poses a problem for us...K is not a fan of vegetables and neither one of us are huge fans of fish, but we are trying to like it. I made this one night and K has now decided that we can have fish anytime if I make it this way, of course I made one, one night that had a stick of butter and potato chips and he likes that one better...but that defeats the purpose of eating healthy, sorry K!
Baked Parmesan Crusted Cod
1/2 cup panko breadcrumbs
1/2 cup grated parmesan cheese
1 lb cod(or haddock)
salt and pepper
Pat fish dry. Season with salt and pepper. Mix together cheese breadcrumbs together. Roll fish in mix and pile the rest of the mixture on top of the fish. Bake in 400 degree oven for 10-15 mins until white and flaky.
**The cook times will vary depending on the thickness of the fish.
