Breakfast Cookies

I am always looking for new recipes to try especially for breakfast or in most cases I also use them for snacks. This recipe has been on my menu for about 3 weeks now...and I finally got to make them today.

Breakfast Cookies-adapted from Lynn's Kitchen
1 cup chunky peanut butter
3/4 cups honey
1/4 cup unsweetened applesauce
1/4 cup canola oil
1/2 cup quick cook oatmeal
2 cups whole wheat flour
2 eggs
1 tsp baking soda
1 tsp baking powder
1/4 tsp salt
1 cup rice cereal
1/2 cup raisins
1/2 cup semi sweet chocolate chips

Preheat oven to 350. Combine honey, peanut butter, oil, eggs, applesauce, stir to combine. Add in flour, soda, salt, powder, and oatmeal. Stir. Fold in cereal, raisins, and chocolate chips. Scoop by tbsp onto cookie sheet, flatten lightly, and cook for 12 mins.

**My cookies were softer and I could still taste the honey. So next time I will cut the honey back a little bit. I am not sure that I like honey and peanut butter flavor together! The cookies tasted much better the next day, the honey was not as strong. Delicious!
