Creamy Chicken Stew

I found this recipe over at What's for Dinner? I thought it sounded different and interesting...upon further review I realized it was very similar to the taco soup I make with one new addition. It was still delicious!

Creamy Chicken Stew-adapted from What's for Dinner?

1 lb frozen chicken breast
1 can black beans, rinsed and drained(or your own beans!)
1 pkg frozen corn
1 jar salsa
1 can diced tomatoes
1 cup water
1/2 cup beef broth(only b/c I had it to use up, completely not needed)
1 tsp cumin
cayene and chili powder to taste
4 oz(or half a bar) reduced fat cream cheese

Place all ingredients in slow cooker with chicken placed on the bottom. Cover and cook on low for 6-8 hrs. 30 mins before serving take out chicken and shred. Add in cream cheese, cover and let sit, stir until melted.

**The orginal recipe was called "kicking" but when all was said and done it was not kicking so I added the additional spices. We did like!

    What size of salsa jar? 8oz?

  2. Hallee-I'm not sure, I want to say 12 oz? I'd look but the jar just went out in the recyclables. You can use more if you want.
