Pumpkin Cinnamon Rolls with Cream Cheese glaze

I love pumpkin and have wanted to try cinnamon rolls for a while. Well tomorrow I am off to the Taste Of Home's cooking show with my mom, aunt, and future cousin in law. My in-laws will be staying with the boys, while K works, so I figured why not make them now? So I did! Thanks so much to my friend, Kate for sharing the recipe!

Pumpkin Cinnamon Rolls with Cream Cheese Glaze
1/4 cup butter, melted
1/4 cup warm water
2 tbsp+1 tsp sugar
2 1/4 tsp yeast
1 can solid packed pumpkin
5 1/2 cups flour(whole wheat or all purpose)
2 eggs

Filling:
1 scant cup dark brown sugar
1/2 cup butter, softened
1 tbsp cinnamon

Glaze:
4 oz softened cream cheese
2 cups powdered sugar
1/2 tsp vanilla
3-4 tbsp milk

Stir water, tsp sugar, and yeast together. Let sit for 5 mins until foamy. Add yeast to eggs, sugar, butter, and pumpkin, stir.

Gradually stir in 5 cups of flour until soft dough forms(I did this in my stand mixer). Switch the paddle to the hook attachment, and set to setting 2, while you add in the rest of the flour. Need for 2-3 mins. Grease bowl, cover, and let rise for 1 hr or until doubled.

Meanwhile, mix together the filling.

Punch dough down...and divide into 2 pieces(this part I missed on the original recipe!) Roll dough out into 16x10 inch rectangle. Sprinkle with half of the filling and roll like a jelly roll, so you end up with a log. Cut into 1 inch slices and place into a greased 9x13 inch pan. Repeat with second piece of dough. Cover and let rise 30-40 mins or until doubled. Place in 350 degree oven for 25-30 mins until golden brown.

Once rolls are out of the oven, prepare glaze. Drizzle or spoon over rolls.

**Next time I will add some pumpkin pie spice to the dough mix. I feel like it is missing something.
